Frijoles Charros

In Mexico, beans are common accompaniments to meat or breakfast dishes. Frijoles charros consists of pinto beans cooked with bacon, onion, and garlic. Some recipes add sausage and tomatoes, and additional spices such as cumin or cilantro.

Ingredients

  • 2 lbs (900 g) pinto beans, soaked overnight
  • 6 cups (1.5 liters) water
  • 4 cloves garlic
  • 2 tsp (10 ml) salt
  • ½ lb (230 g) bacon
  • 2 medium white onions
  • 2 tomatoes, diced
  • Ground chipotle pepper, to taste

Directions

  1. Cover beans with water. Add garlic and salt, and simmer in a pot or slow cooker for 1½ hours.
  2. Cook bacon in skillet and drain half of the fat. Set bacon aside.
  3. Cook onion in the bacon fat until tender. Then add diced tomatoes and cook briefly. 
  4. Add the onions, tomatoes, and cooked bacon to the beans. Stir well and cover, cooking for about 4 hours on low heat.
  5. Add ground chipotle pepper to taste and continue cooking until beans are tender.
  6. Serve warm.
