Arroz Rojo

Arroz rojo, or Mexican red rice, is traditionally seasoned with tomato, onion, and pork cracklings. Some recipes include tomato sauce or tomato purée, and may include chili powder or chile peppers for some heat. Arroz rojo is a common accompaniment to meat dishes such as carnitas or enchiladas.

Ingredients

  • 1 cup (240 ml) vegetable oil
  • 1 cup (190 g) long grain white rice
  • 2 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 cup (240 ml) tomato purée
  • 1 carrot, chopped
  •  ½ cup (150 g) pork cracklings, fried crisp
  • 1¼ cups (300 ml) chicken stock
  • 2 Tbsp (30 ml) chili powder
  • ½ tsp (2.5 ml) salt

Directions

  1. Heat the oil in a heavy skillet over medium-high heat.
  2. Add rice and cook, stirring until rice is golden. Drain off any excess oil.
  3. Add the garlic, onion, and tomato purée, and fry for a few minutes.
  4. Add the carrot, cracklings, chicken stock, chili powder, and salt. Stir to combine.
  5. Cover and cook over low heat until liquid is absorbed and rice is tender, 20–25 minutes.
  6. Let stand for 5 minutes, covered, before serving.
