Sopaipilla

Sopaipillas are puffed pillows of pastry that add a contrasting crunchiness to soups. They are also served with honey for dessert, or as snacks and appetizers with queso fresco (creamy cheese). These small pastry squares are deep-fried to a golden brown and are best served warm.

Ingredients

  • 2 cups (240 ml) flour
  • 1 tsp (5 ml) baking powder
  • 1 tsp (5 ml) salt
  • 2 Tbsp (30 ml) lard
  • ¾–1 cup (180–240 ml) warm water
  • 3 cups (720 ml) oil, for frying

Directions

  1. Sift flour, baking powder, and salt into a mixing bowl.
  2. Rub in lard so mixture resembles breadcrumbs. Starting with ¼ cup (60 ml) water, gradually add to form a soft dough. Shape into a ball, cover, and let rise for 60 minutes.
  3. Roll dough out thinly on a floured surface. Cut into 3-inch (7.5-cm) squares or rounds.
  4. Add oil to a skillet, heat over medium-high, and add dough, deep-frying to a golden brown.
  5. Drain sopaipillas and serve hot.
