Pico de Gallo

Pico de gallo (literally, "rooster’s beak") is a fresh, uncooked salsa made with tomatoes, fresh chilies, and onions. Often served with chips as an appetizer, pico de gallo is also an accompaniment to grilled meats and a garnish for tacos.  Recipe Serving: Makes about 2 cups (450 ml).

Ingredients

  • 4 tomatoes, seeded and chopped
  • 1/2 cup (75 g) onion, finely chopped
  • 2 jalapeños, seeded and finely chopped
  • 1 1/2 tsp (7.5 ml) fresh cilantro, finely chopped
  • 1 tsp (5 ml) lime juice salt to taste

Directions

  1. Combine ingredients in a glass or other non-reactive bowl.
  2. Refrigerate for at least 30 minutes before serving.

Notes

For a smooth sauce, place all ingredients, roughly chopped, in a blender and purée. For a spicier sauce, include some or all of the jalapeño seeds.
