Jamoncillos

Traditional Mexican sweets similar to fudge, jamoncillos are made mainly from milk and sugar. They are usually topped with pecans, but can also be made without nuts. Cocoa powder, almond extract, or cinnamon can be added. These sweet, creamy treats are easy to make, but require a few hours to cool before serving. Recipe Servings: Makes 24 servings

Ingredients

  • 1 qt (1 l) whole milk 
  • 1 3/4 cup (350 g) sugar 
  • 2 tsp (10 ml) vanilla extract
  • 1 tsp (5 ml) baking soda
  • 1 cup (150 g) pecans, chopped (optional) 
  •  

Directions

  1. In a large saucepan, combine milk, sugar, vanilla, and baking soda. Cook over medium heat and bring to a boil.
  2. Cook until a candy thermometer reaches 240 degrees F (115 degrees C), about 20 minutes. Stir continuously. 
  3. Remove from heat and add chopped pecans (if using). 
  4. Using an electric mixer, beat the mixture for about 5 minutes.
  5. Butter a 9 x 9-in (23-cm) pan. Pour the candy into the pan. 
  6. Cool candy. Cut into pieces before serving.
