Frijoles Charros
In Mexico, beans are common accompaniments to meat or breakfast dishes. Frijoles charros consist of pinto beans cooked with bacon, onion, and garlic. Some recipes add sausage and tomatoes, and additional spices such as cumin or cilantro. Recipe Serving: Serves 6

Ingredients
- 2 lbs (900 g) pinto beans, soaked overnight
- 6 cups (1.5 liters) water
- 4 cloves garlic
- 2 tsp (10 ml) salt
- 2 medium white onions
- 2 tomatoes, diced
- 1/2 lb (230 g) bacon
- chipotle pepper powder, to taste
Directions
- Cover beans with water. Add garlic and salt, and simmer in a pot or slow cooker for 1 1/2 hours.
- Cook bacon in skillet and drain half of the fat.
- Cook onion in the bacon fat until tender. Add tomatoes.
- Add the bacon, onions, and tomato to the beans. Stir well and cover, cooking for about 4 hours on low heat.
- Add chipotle powder to taste and continue cooking until beans are tender.
