Ingredients

  • ¼ cup (60 ml) extra virgin olive oil
  • 2 Tbsp (30 ml) orange juice
  • 1 Tbsp (15 ml) lime juice
  • 1 Tbsp (15 ml) red wine vinegar
  • ½ tsp (2.5 ml) salt
  • ¼ tsp (1.25 ml) pepper
  • 2 cups (110 g) torn green lettuce leaves
  • 1 cup (150 g) diced cooked beets
  • 1 cup (130 g) diced jicama
  • ½ cup (90 g) chopped orange segments
  • ¼ cup (40 g) pomegranate seeds
  • ½ cup (120 ml) chopped peanuts
  • 2 Tbsp (30 ml) chopped cilantro

Directions

  1. Make the vinaigrette by whisking the oil, juices, vinegar, salt, and pepper together.
  2. Layer a glass salad bowl with lettuce. Follow with the beets, jicama, orange, and pomegranate.
  3. Sprinkle on the peanuts and cilantro.
  4. Splash on the vinaigrette and serve.
