Alegrías

Alegrías, meaning "joys" in Spanish, are traditional Mexican treats made primarily with amaranth seeds, honey, and sometimes dried fruits or nuts. Amaranth, an ancient grain cultivated by the Aztecs, has been a staple in Mexican cuisine for centuries due to its high nutritional value and versatility. Alegrías are beloved for their sweet, nutty flavor and chewy texture, making them both a delicious snack and a nostalgic dessert. Often sold in markets and fairs, these treats are perfect for celebrations or as a healthy snack. Alegrías are easy to prepare and offer a unique taste of Mexican tradition.

Ingredients

  • 2 cups (240 g) amaranth seeds
  • ½ cup (120 ml) honey or piloncillo syrup
  • ¼ cup (50 g) granulated sugar
  • ¼ tsp (1 ml) salt
  • ¼ cup (40 g) raisins or chopped dried fruit (optional)
  • ¼ cup (30 g) chopped nuts, such as almonds or pecans (optional)

Directions

  1. Heat a dry, heavy-bottomed skillet over medium-high heat. Add a few tablespoons of amaranth seeds at a time, covering the pan. Stir continuously for 10–15 seconds until the seeds pop like tiny popcorn. Remove immediately to prevent burning. Repeat until all seeds are puffed.
  2. In a medium saucepan, combine the honey, sugar, and salt. Cook over medium heat, stirring constantly, until the sugar dissolves and the mixture thickens slightly, about 5 minutes.
  3. Remove the syrup from heat and quickly stir in the puffed amaranth, raisins (if using), and nuts (if using). Mix until all the ingredients are evenly coated with the syrup.
  4. Line a baking dish or tray with parchment paper. Transfer the mixture to the tray and press it down firmly with a spatula or your hands (use wax paper to prevent sticking) to create an even layer. Aim for a thickness of about ½ inch (1.25 cm).
  5. Allow the mixture to cool at room temperature for about 1 hour, or until set. Once cooled, cut into bars or squares.

Notes

  • Store alegrías in an airtight container at room temperature for up to a week.
  • For added flavor, sprinkle a pinch of cinnamon or drizzle melted chocolate over the top before cutting.
