Huevos Rancheros
Huevos rancheros are a Mexican breakfast tradition with many versions, some with cheese, beans, or grilled chilies. The most authentic way to make huevos rancheros is very simple: eggs and salsa, served on corn tortillas. Onion, cilantro, and/or garlic may be added. Recipe Serving: Serves 2

Ingredients
- 4 corn tortillas
- olive oil
- 4 eggs
- 1 cup (240 ml) red salsa (or thin tomato and cumin sauce)
- salt to taste
Directions
- Fry corn tortillas in olive oil until golden and a little crisp. Drain and set aside.
- In another frying pan, heat some oil and fry eggs gently on one side until whites are firm but yolks are still runny.
- Salt to taste. Place 2 tortillas on each serving plate and 1 egg on each tortilla.
- Heat salsa in pan on high heat for about 2 minutes, until quite hot. Spoon 1/4 cup (60 ml) over each egg.
- Let rest 1 minute before serving.
