Huevos Rancheros
Huevos rancheros are a Mexican breakfast tradition with many versions, some with cheese, beans, or grilled chilies. The most authentic way to make huevos rancheros is very simple: eggs and salsa, served on corn tortillas. Onion, cilantro, and/or garlic may be added.

Ingredients
- 4 corn tortillas
- Olive oil, for frying
- 4 eggs
- Salt, to taste
- 1 cup (240 ml) red salsa
Directions
- Fry corn tortillas in olive oil until golden and a little crisp. Drain and set aside.
- In another frying pan, heat some oil and fry eggs gently on one side until whites are firm but yolks are still runny. Salt to taste.
- Place 2 tortillas on each serving plate and 1 egg on each tortilla.
- Heat salsa in pan on high heat for about 2 minutes, until quite hot. Spoon ΒΌ cup (60 ml) of salsa over each egg. Let rest 1 minute before serving.
