Huevos Rancheros

Huevos rancheros are a Mexican breakfast tradition with many versions, some with cheese, beans, or grilled chilies. The most authentic way to make huevos rancheros is very simple: eggs and salsa, served on corn tortillas. Onion, cilantro, and/or garlic may be added. Recipe Serving: Serves 2

Ingredients

  • 4 corn tortillas
  • olive oil
  • 4 eggs
  • 1 cup (240 ml) red salsa (or thin tomato and cumin sauce)
  • salt to taste

Directions

  1. Fry corn tortillas in olive oil until golden and a little crisp. Drain and set aside.
  2. In another frying pan, heat some oil and fry eggs gently on one side until whites are firm but yolks are still runny.
  3. Salt to taste. Place 2 tortillas on each serving plate and 1 egg on each tortilla.
  4. Heat salsa in pan on high heat for about 2 minutes, until quite hot. Spoon 1/4 cup (60 ml) over each egg.
  5. Let rest 1 minute before serving.
