Quesadillas

In its simplest form, a quesadilla is a grilled tortilla with melted cheese, usually served with salsa. Quesadillas can also be filled with chicken, beef, and/or veggies for a more complete meal. They are often made with corn tortillas, but flour tortillas may also be used.

Ingredients

  • 10 corn tortillas
  • 2 cups (450 ml) Monterey Jack cheese, grated

Directions

  1. Heat a large frying pan or griddle over a medium heat.
  2. Place 1 tortilla flat on the frying pan. After 1 minute flip the tortilla over.
  3. Sprinkle a little more than ¼ cup (60 ml) cheese on the tortilla.
  4. Place another tortilla on top to make a sandwich. Cover the pan with a lid.
  5. After 1 minute, flip the quesadilla.
  6. When the cheese has melted on the inside, remove the quesadilla. Repeat with remaining tortillas and cheese.
  7. Cut the quesadillas into triangles and serve.
  8. Common accompaniments for quesadillas include red or green salsa, sour cream, pico de gallo, and sliced avocado or guacamole.

Notes

Queso fresco or Colby Jack cheese can be substituted for Monterey Jack cheese. After cheese is sprinkled, sliced fresh or pickled jalapeño peppers, finely chopped onion, black olives, grilled shredded chicken, or chorizo may be added to taste.
