Guacamole

Guacamole is a seasoned avocado dip created by the Aztecs. This dish is often made using a large mortar and pestle, or the avocados can simply be mashed with a fork. Other ingredients vary, but often include jalapeño, garlic, tomato, onion, cilantro, and lime juice. Guacamole is usually served with crisp, fried corn tortillas and spicy salsa.

Ingredients

  • 3 avocados
  • Juice of 1 lime
  • 1 jalapeño, seeded and finely chopped
  • 1 Tbsp (15 ml) olive oil
  • 1/3 cup (15 g) cilantro, finely chopped
  • 1–2 cloves garlic, finely chopped
  • 1 tomato, finely chopped
  • 1 onion, finely chopped
  • Salt to taste

Directions

  1. Cut avocados in half and remove pits. Scoop flesh out using a teaspoon, and place in a non-reactive work bowl.
  2. Immediately pour half of the lime juice over the avocado to prevent discoloration.
  3. With a fork, mash the avocado while mixing in the lime juice to achieve a rough purée.
  4. Add the remaining ingredients, one at a time, stirring to distribute evenly after each addition.
  5. Taste and add additional lime juice if needed when correcting the seasoning.
  6. Guacamole can be served immediately or chilled, its surface covered with plastic wrap to prevent oxidation.
  7. Serve with corn tortilla chips. Accompany with sour cream or salsa if desired.

Notes

If guacamole is to be served alongside a very spicy salsa or as an accompaniment to a highly spiced dish, 1/2 cup (120 ml) sour cream may be added and the tomato, onion, and/or jalapeño may be omitted. For a spicier dish, add up to 1/4 tsp (1.25 ml) cumin, cayenne, or chili powder and 1/2 tsp (2 ml) ground coriander.
